Tangerine Cranberry Sauce

                       



So I offered to do a thanksgiving lunch at my job. Instead of buying everything premade I'm making it all from scratch. Everybody at work thinks I'm crazy but I just love cooking.



One thing that I never understood was cranberry sauce out of a can. Whyyyyy? It is the easiest thing to make. Well as I came to make it last night I laid eyes on my tangerine juice from trader joes. Let me tell you if it weren't for this juice I wouldn't have a lick of vitamin c in my body. It's to die for especially for a orange juice hater like me. I decided to sub some sugar and all the water for the juice. It came out to be the best tart cranberry sauce that is perfection! I even brought some to work to have with my breakfast :)

Tangerine Cranberry Sauce

6 cups fresh cranberries

2 cups tangerine juice

1 cup sugar

Put all of the ingredients in a pot and bring to a slow boil. Stir occasionally until you hear the cranberries popping (which is my favorite part!). Let the berries pop for about 5 minutes then bring to a simmer. Smash remaining berries and stir. When sauce starts to thicken turn off heat let cool in the pan then transfer to container and refrigerate.
