Preserved Lemons




  So I'm just glancing through photos on the computer and I realize there are a lot of blogs I planned and never did. Since my last post I went to PR, NY, started the haunt season and still working at the insurance company. Trust me in the middle of all that I kept thinking "I probably should post something". Well here I am :) This is a really REALLY easy recipe for preserved lemons. This adds a lot of flavor to food really easily and effortlessly. Especially if you like the essence of lemons but hate the thought of using a microplane for ten minutes for some flavor. You can also add herb or other flavors in to change it up. Hope you enjoy it! 




What you need:

~ 4-6 lemons washed really well

~ 1/4 cup salt (don't use kosher salt like I have pictured. It made it way too salty and didn't break down the way it should have)

~ large jar




      You can cut up the lemon in different ways. You can slice it down one side and stuff with salt. I made slices so that later I dont have to try and cut a huge mushy lemon for a little preserve. 




Place the salt in a bowl and get your jar ready. 





put the slices in the bowl and toss them to coat




Layer them in the jar





Don't worry about squishing them! Pack em in there 






Close up the jar nice and tight and stick it in the fridge. It will start giving off its own juices and it will fill up the jar in about a week or two. I don't have a picture of the finished product unfortunately. Again make sure you don't over salt! If it seems like too little salt don't worry. Experiment with some new flavors also! I think I might try it with some fresh sage to add to all the holiday cooking coming up. I hope I will be posting more often soon. I really miss doing it and its major stress reliever. Not to mention I surpassed my 1,000 views and didn't even get to celebrate!!! Happy cooking <3
